What is "parching" and "roasting"?
Wild Rice comes from the field with a 60% moisture content (White Rice is 20%). Parching is part of the drying process, which gives Wild Rice its characteristic smoky, roasted, nutty flavor. The end result is a product with 7-12% moisture.
What does "Scarified" mean?
Roughing up the bran layer by scratching it in the hulling machine in order to speed up cooking time and improve the cooking consistency. If the kernel has been scarified it is light in color. If the kernel has not been scarified, it is dark and glossy.
What is the shelf life of wild rice?
Dry or uncooked wild rice can be stored up to 10 years in a dry, airtight container. Cooked wild rice (plain) can be stored for one week in the refrigerator. When storing cooked wild rice in the refrigerator, drain well and place in an airtight container.
Is infestation an issue with Wild Rice?
No, because the grain is particular hard and the temperature is generally too cold.
What goes well with wild rice?
Wild rice is often used as a side dish with wild game, duck, pheasant, pork and seafood, especially salmon. It is also used in soups, salads, stuffings and dressings. It blends well with other rice like white or brown, and goes well with mushrooms, cranberries, cherries, apricots, nuts, honey, and maple syrup.
