Creamy Wild Rice Soup

Ingredients:

6 Tbsp butter or margarine
3 Tbsp green onion, chopped
1/3 cup flour
4 cups chicken broth
1/2 cup ham, cubed
2 cups Gourmet House® Wild Rice, cooked
1/4 cup carrots, finely grated
3 Tbsp pecans, chopped
1/4 tsp white pepper
1 cup half and half
parsley, chopped, if desired


Directions:

In a large saucepan, melt butter and sauté onions. Blend in flour then gradually add broth. Cook, stirring constantly, until mixture comes to a boil. Boil 1 minute. Stir in ham, wild rice, carrots, pecans, and pepper. Simmer 5 minutes. Blend in half & half; heat to serving temperature. Garnish with parsley.
