Santa Fe Black Beans and Rice

Serves 4


Lean ground beef, onions, bell peppers and black beans ... serve over hot cooked rice or in a burrito-size tortilla for a lunch wrap.


Ingredients:

1 cup Gourmet House® White Rice or Organic White Rice
1 Tbsp oil
1 lb lean ground beef
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1 bay leaf
1 can (14 1/2 oz.) Mexican-style stewed tomatoes
1 can (15 oz.) seasoned black beans, rinsed and drained
1 1/2 tsps ground cumin powder
1 tsp garlic salt
1 Tbsp red wine vinegar
1 cup Jalepeño Monterey Jack cheese, shredded


Directions:

Prepare rice according to package directions. Divide equally into four serving bowls.

In a large skillet, heat oil and brown ground beef until no longer pink. Add onions, peppers, and bay leaf. Continue cooking until vegetables are tender. Add tomatoes, black beans, and seasonings. Simmer for 2 minutes. Remove bay leaf.  Stir in vinegar. Divide into 4 equal portions and serve over rice. Top each bowl with shredded cheese.

Wrap it up ... here's a great serving suggestion! Prepare recipe as directed. Using four burrito-size tortillas, divide the prepared recipe equally and enjoy!!!
