Waldorf Brown Rice Salad

Serves 6


Is it a dessert or a side-dish?  Start with cooked, cooled whole grain brown rice.  Add delicious apples tossed in lemon juice.  Mix with crunchy walnuts, dried cranberries ... make the dressing with fat-free mayonnaise and vanilla yogurt.  Just mix well and enjoy ...


Ingredients:

1 cup Gourmet House® Brown Rice or Organic Brown Rice, cooked and cooled
2 medium Golden Delicious or Cortland apples
1 Tbsp lemon juice
1/2 cup celery, chopped
1/2 cup walnuts, chopped
1/2 cup raisins
1/2 cup fat free mayonnaise
3/4 cup non-fat vanilla yogurt
Spring salad greens (optional)


Directions:

Prepare rice according to package directions. Cool.
 
Wash, core and dice apples, without peeling. Place apples in large bowl and toss with lemon juice.  Add brown rice, celery, nuts and raisins; toss to combine. In medium bowl, combine mayonnaise and yogurt. Blend well.  Fold into rice mixture.

Serve over salad greens, if desired.
