Mint and Apple Brown Rice Salad

Serves 4 to 6

A delicious whole grain salad idea with fresh mint leaves and crisp apple --- tossed with tangy orange juice and seasoned rice wine vinegar


1 cup Gourmet House® Brown Rice or Organic Brown Rice
1 cup cooked whole wheat berries, optional
1 Tbsp orange zest
1/3 cup fresh orange juice
2 Tbsps seasoned rice wine vinegar
2 Tbsps olive oil
1 cup fresh mint leaves, chopped
1 red apple, diced
1/2 cup walnuts, chopped and toasted
2 green onions, sliced
salt and ground black pepper, optional


Prepare rice according to package directions.

In a medium bowl, whisk together zest, juice, vinegar and olive oil.  Fold in rice, and remaining ingredients.  Season with salt and pepper, if desired.  Serve room temperature or chilled.
