Gingered Shrimp and Rice

Sauté fresh ginger and garlic, add shrimp, crisp snow peas and red bell pepper --- MMMmmm, stir fry and serve over hot-cooked rice.


Ingredients:

1 cup Gourmet House® White Rice or Organic White Rice
1 Tbsp vegetable oil
2 Tbsps fresh ginger root, grated
1 Tbsp garlic, minced
1 lb shrimp, peeled and deveined
1 cup snow pea pods
1/2 cup red bell pepper, julienned
1 tsp salt
1 tsp ground black pepper
1/4 cup green onion, thinly sliced


Directions:

Prepare rice according to package directions.

Heat oil in a large skillet over medium-high heat. Add ginger and garlic and stir-fry 30 seconds. Add shrimp and stir-fry until just pink, about 3 minutes. Add snow peas, bell pepper, salt and pepper. Stir-fry until vegetables are crisp-tender and shrimp are cooked through, about 3 more minutes. Serve over cooked rice. Garnish with green onions.
