Brown Rice Italian Medley

Serves 4

Delicious side-dish recipe idea ... whole-grain brown rice, sautéed asparagus, red and yellow peppers --- topped with fresh parmesan cheese.


1 cup Gourmet House® Brown Rice or Organic Brown Rice
1 Tbsp olive oil
8 oz asparagus spears, cut into 1-inch pieces
1/2 cup red bell pepper, diced
1/2 cup yellow bell pepper, diced
1/4 cup pine nuts
salt and ground black pepper, optional
1/4 cup Parmesan cheese, shredded


Prepare rice according to package directions.  Heat oil in a large skillet over medium heat. Add asparagus and peppers and sauté 5 minutes, or until crisp, tender. Stir in pine nuts and rice and heat through. Season with salt and pepper, if desired. Serve topped with Parmesan cheese.
